October 25, 2026 will be a special day at Weingut Lisa Pfneisl in Deutschkreutz: Together with Max Stiegl, we are bringing THE traditional pig slaughter to the winery — an all-day experience dedicated to the animal, the craft, the origin, and of course, our wines.

The Sautanz (Traditional Pig Slaughter)

The Sautanz is a traditional custom where a pig is completely processed. From early morning until late afternoon, a variety of dishes are prepared over an open fire in the winery's courtyard. Cooking is done step by step, following the rhythm of the day and the craft.

There is no classic menu sequence, no fixed table arrangement, and no going back. All dishes are prepared only once and served exactly when they are ready. You move freely, taste, watch, sample, discover — and experience firsthand how an entire animal is transformed into excellent food.

The focus is on the whole animal: NOSE TO TAIL, without compromise.

The Wine Experience

The day will be accompanied by an all-day wine tasting featuring the entire range of Weingut Lisa Pfneisl. Several wine bars will offer selected wines, vertical tastings, large formats, themed flights — and perhaps even one or two vinophile guests.

Sautanz Music

The musical accompaniment for this special day at the winery will be provided by Die Hopfenswingers.

The event begins at 08:00 AM. We ask all participants to be punctual, as the work steps follow a logical sequence and all dishes are served only once.
